چکیده
A new cardinal parameter growth and boundary model for non-proteolytic C. botulinum was developed validated fresh lightly preserved seafood poultry products. 523 rates in broth were used to determine values terms temperature, pH, NaCl/water activity, acetic, benzoic, citric, lactic sorbic acids. The included the inhibiting interactive effect between these factors it calibrated using curves from 10 challenge tests with unprocessed seafood. For evaluation, 40 well characterized performed. Comparison of observed (?max-values) predicted by resulted a bias factor (Bf) 1.12 an accuracy (Af) 1.40. Furthermore, evaluated 94 432 time toxin formation data extracted scientific literature seafood, poultry, meat, pasta prepared meals. These responses 36 different toxigenic strains botulinum. obtained Bf-/Af-values 0.97/2.04 ?max-values 0.96/1.80 formation. correctly 93.8% 5.6% being fail-safe <1% fail-dangerous. cocktail four non-toxin producing Clostridium spp. isolates develop had more than 99.8% 16S rRNA gene similarity (Group II). high number environmental makes flexible tool facilitate development or reformulation products that do not support Further, evaluation is desirable particularly vegetables, meals as dairy present study.

A Neural Model of Time to Toxin Production by Non-Proteolytic Clostridium botulinum
Clostridium botulinum is a bacterium present in the raw ingredients of many foods. It produces a powerful neurotoxin as part of its growth process, that can prove fatal when doses as small as a few micrograms are consumed. It is therefore vital to be able to accurately determine the food processing and storage conditions where toxin production is prevented. This paper describes a new model of t...
متن کاملGrowth and toxigenesis behavior of Clostridium botulinum type E in Persian sturgeon (Acipenser persicus) Caviar prepared with various preservatives
Growth behavior of Clostridium botulinum type E beluga was studied in Acipenser persicus granular caviar treated with 5% NaCl, 5%NaCl plus 0.3% boric acid and 0.4%borax and 5%NaCl plus 0.15% methyl paraben incubated at temperatures -2, 5 and 15 °C for 224 days. The initial number of inoculated bacterial spore was 5.1×104 cfu/g caviar in each treated sample. The number of bacterial spores in sam...
متن کاملEffect of water activity and pH on growth and toxin production by Clostridium botulinum type G.
The combined effect of water activity (aw) and pH on growth and toxin production by Clostridium botulinum type G strain 89 was investigated. The minimum aw at which growth and toxin formation occurred was 0.965, for media in which the pH was adjusted with either sodium chloride or sucrose. The minimum pH (at the optimum aw) for growth and toxin production of C. botulinum type G was found to be ...
متن کاملEffect of vacuum packaging on growth of Clostridium botulinum and Staphylococcus aureus in cured meats.
Incrimination of vacuum-packaged smoked fish in outbreaks of botulism has raised questions about the safety of this process in comparison with other methods of packaging foods. It has been suggested, for example, that Clostridium botulinum may grow better in a vacuum-packaged product than in one that is packaged without vacuum. To evaluate this possibility, sliced bologna was inoculated with sp...
